Research activity

My research focuses on the plant-based diet and its impact on muscle health. Indeed, one of the solutions being considered to address the current dietary transition is to plant-based diets, that is, to replace some animal products with plant-based ones. These so-called "plant-based" diets could be associated with health benefits and successful aging. However, despite the interesting nutrient density of plant-based sources, the quality of their proteins is lower than that of animal proteins. Therefore, my primary objective is to develop new strategies to improve the quality of plant-based proteins and meet the nutritional needs of seniors. In particular, I have developed a strategy combining the complementarity of sources between cereals and legumes and the use of bioprocesses such as germination or fermentation to improve the ai composition and protein digestibility of plant-based foods. However, there has recently been a question about the impact of a plant-based diet on the health of seniors and the proportion of animal protein that should be maintained in this population. Indeed, older people have an increased need for good nutritional quality protein, particularly to maintain muscle mass and function and prevent the onset of sarcopenia. However, given the lower quality of plant-based proteins, an overly or poorly plant-based diet could therefore represent a risk for the health of seniors. Thus, my second objective is to evaluate the long-term impact of a plant-based diet on the muscular health of seniors.
