Zein: a lever for optimizing plant-based protein intake to combat sarcopenia

Objectives

Zein, a corn protein, is distinguished by its richness in leucine, an amino acid that contributes particularly to muscle anabolism. However, it is currently excluded from the supply of plant proteins for humans because it is poorly soluble and very poorly digestible. The objective of the project is to develop, from zein, a balanced and leucine-optimized plant protein blend that will prevent and/or combat sarcopenia without resorting to a high-protein diet, in a context of plant-based diets. This "zein" ingredient could be offered in nutritional supplements for the elderly or those with loss of appetite.
