7. Extracellular vesicles : a new trend in biological sciences

Summary of the key fact

Extracellular vesicles (EVs) are nanostructures secreted into an environment by any organism. As true "carriers" of various molecules, they have the capacity to propagate biological messages between tissues and organisms. Different aspects of the biology of EVs are studied in Clermont-Ferrand research laboratories and were presented during a first day of meetings organized by the UNH in February 2022. Researchers are interested in EVs in a nutritional context, particularly their involvement in the vasoprotective effects of bioactives in plant foods such as polyphenols. Thus, an increase in different EVs, similar to those detected during various pathologies, occurs in response to the single or chronic intake of nutritionally unbalanced diets, while diets considered healthy lead to their decrease. This work thus highlights unexplored questions on the biology of EVs and the interest of this new field of research in nutritional biology.
